Prepare the chocolate mint cupcake batter being careful not to over mix it.
Fill each cupcake liner 1/2 to 2/3rds full with the batter.
Bake for 18 to 20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Let cool.
Make the ganache frosting with chocolate chips and heavy cream. Allow to cool for thicker frosting.
Pipe frosting onto the cupcakes as desired. Top with an Andes mint, if you'd like.
