Prepare the cookie dough. Refrigerate for 1 to 2 hours. This step helps to keep the cookies from spreading too much when baking.
Roll the dough into 1-inch balls and place on a prepared cookie sheet. Use a fork to make the crisscross shape onto the top of each cookie.
Bake cookies for about 10 minutes. Allow cookies to cool for a few minutes, then remove to a cooling rack to cool completely.
When cookies are cool, melt the chocolate. Dip each cookie in the chocolate and place on parchment paper. Sprinkle on chopped peanuts. Allow to set.
