Season chicken with salt and pepper. Cook in olive oil until done through. Remove to a plate and tent with foil to keep warm.
Cook onion for 2-3 minutes or until they soften and start to turn translucent. Stir in the garlic and ginger and cook for another minute.
Add the broccoli, carrots, snow peas, red bell pepper and water chestnuts. Cook until crisp-tender, about 3-4 minutes.
Stir back in the chicken as well as the peanut sauce and mix to evenly combine. Serve over rice or noodles, and top with the chopped peanuts.
