Chicken Fajita Bowls

Chicken Fajitas Bowls are made with a zesty marinade of traditional fajita seasonings and plenty of cilantro and lime. They are served with sweet peppers, onions, and avocado over cauliflower rice.  This incredibly flavorful recipe is low carb, gluten free and dairy free.

Chicken Fajita Bowls Ingredients

Marinate Chicken

Marinate chicken in olive oil, lime juice, garlic, brown sugar, chili powder, cumin, crushed red pepper, salt, smoked paprika, oregano and cilantro.


Cook The Chicken

Cook chicken, stirring occasionally, until no longer pink in the center, about 5-7 minutes. Remove to a plate.


Cook Cauliflower

Cook cauliflower rice until tender, stirring often, about 10-15 minutes. You can use regular rice, if preferred.


Cook Vegetables

Cook peppers and onions until just charred and fork tender, about 5-7 minutes.


Assemble Bowls

Assemble the bowls with cauliflower rice, chicken, and vegetables. Top with avocado, cilantro, and drizzle with reserved marinade.
