Cook the onion and red pepper until soft and translucent, about 3-4 minutes, stirring often. Stir in the garlic.
Add the chicken and taco seasoning. Cook, until no longer pink in the center, about 5-7 minutes.
Stir in the salsa, black beans, and corn. Cook another minute or two to heat through. Add the rice to the skillet and stir until well combined.
Spread everything evenly in the skillet and top with shredded cheese.
Cover to let the cheese melt, or place the pan in an oven preheated to 350°F to melt and brown to your liking.
