Bring water, heavy cream, and salt to a boil in a medium pot. Stir in the grits, cover and reduce the heat to low. Cook 12-15 minutes, stirring often.
Once the grits are cooked and creamy, add the butter. Once melted, remove the pot from the heat and stir in the cheese.
