Sheet Pan Vegetarian Nachos are restaurant-style nachos but are entirely meatless! They are made with vegetarian, chili-seasoned “ground beef” and all of the traditional nacho toppings you love. This is a quick and easy appetizer recipe you can make right in your own home.
I think I’ll always wish that there were more vegetarian options about 20 years ago when I started what would end up being a 10 year run as a vegetarian. I still love vegetarian recipes – especially now-a-days with so many amazing vegetarian foods that didn’t exist (or weren’t quite as tasty) back then.

I’ve become quite familiar with many of Sweet Earth’s products, especially lately. Every product, including burritos, meals, pizzas, Mindful Chik-n and Awesome Grounds, that I’ve had so far has big flavor and is plenty filling.
It’s totally accurate to say that I am a fan and I recommend that anyone looking to go entirely vegetarian or just include more meatless meals in their routine to give them a try!
For this sheet pan version of Vegetarian Nachos, I use Sweet Earth’s Awesome Grounds, which is a new product made from non-GMO plant-based proteins, like pea and wheat protein. Each serving provides 16 grams of protein and 4 grams of fiber.

How to Make Vegetarian Nachos
Prep!
Preheat oven to 400°F.
Shred the cheddar cheese. You can prep your other toppings now or wait until the nachos are baking to do that part.
Tip: it is recommended to shred the cheese from a block for the best melting.
Heat the olive oil in a large skillet over medium heat.
Add the Sweet Earth Awesome Grounds and season with salt, pepper, chili powder, cumin, and oregano.
Cook for about 3 minutes, breaking up the grounds into fine crumbles.
Add the kidney beans, and continue cooking, stirring often, until the grounds are cooked through and everything is hot, about 2-3 more minutes.
Create!
Spread the tortilla chips out evenly onto a baking sheet.
Top the tortilla chips as evenly as possible with the chili mixture.
Spread the shredded cheddar cheese all over the tortilla chips and chili.
Bake for 5-7 minutes, or until the cheese is completely melted.
Remove the sheet pan from the oven and top with the tomatoes, jalapenos, cilantro, sour cream, and guacamole, or the toppings of your choice. Other popular toppings include red onion, black olives, and salsa.

- Shred the cheese from a block for the best melting.
- Easy adjust the ingredients and toppings to suite your own tastes. If you don’t like an ingredient, leave it out. If you want more of something, add it.
- Store leftover nachos tightly wrapped in the refrigerator. It is best to try to remove the sour cream and guacamole before reheating.

- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1/4 teaspoon oregano
- 1 15 ounce can kidney beans
- 6 ounces tortilla chips
- 4 ounces sharp cheddar cheese * grated
Toppings
- 10 cherry tomatoes * halved or quartered
- 1 jalapeno * cut into slices
- 1/4 cup loosely packed cilantro * roughly chopped
- 1/4 cup sour cream
- 1/4 cup guacamole
Instructions
- Preheat oven to 400°F.
