This easy Strawberry Pie recipe is made with fresh, juicy strawberries and served on a homemade crust. It’s topped with a buttery crumble and is sure to be a crowd pleaser this summer!

I had never heard of such a thing as Strawberry Pie until maybe 7 or 8 years ago. My first experience with this particular type of pie wasn’t all that great. It was basically a pie shell filled with raw strawberries. That’s it. I couldn’t understand how people thought this was so great – and I love strawberries.
So, years later, I decided to play around with the idea of making a different kind of Strawberry Pie. A baked pie with much more flavor, but not so much that the strawberries didn’t shine. I love this version so much more and my fiance, who only ever eats Apple Pie or Apple Cranberry Crisp, has said that I can add this pie to the list of desserts that he likes.
Why This Recipe Works
- The base of this pie is a NILLA Wafer crust which lends hint of vanilla to the mix. You can also use a graham cracker crust or buy a pre-made crust, if you prefer.
- The crumble topping is oats, flour, brown sugar, and more NILLA Wafers! The added texture of the crumble on top of fresh strawberries is amazing! Think of it like Strawberry Bars, but in pie form.

How to Make Strawberry Pie
Prep!
If you’re making your own pie crust, you will want to get that started and baking in the oven before beginning the remaining steps of this recipe.
Preheat your oven to 350°F.
Add the box of NILLA wafers to the bowl of a food processor fitted with a blade.
Pulse a few times until the crumbs are mostly fine. Remove 1/4 cup of the crumbs and set aside.
Melt the butter and mix into the cookie crumbs until everything is just moist. Dump the crumbs into a pie dish and press them evenly and firmly into the bottom and up the sides.
Bake for 10-12 minutes until just set.
Create!
Slice your strawberries into bite-sized pieces.
Take 1 cup of the strawberries and add them to a small sauce pan with the sugar and cornstarch. Mash the strawberries as you bring the mixture to a boil, then remove the pan from the heat.
Place the remaining strawberries into the pie crust.
Pour the strawberry puree mixture over them.
Combine the ingredients for the crumb topping with a fork until it resembles crumbs.
Top the strawberry pie with the crumble.
Bake for 25-30 minutes or until the edges of the crust are slightly browned.
Present!
While this Strawberry pie is easy to make, it does require some time in the refrigerator to set after baking. Be sure to plan ahead with this one! To make slicing this pie easier, and less messy, place it in the refrigerator for approximately 4 hours.

Ingredients
NILLA Wafer Pie Crust
- 1 box NILLA Wafers
- 1/2 cup butter * melted
Strawberry Filling
- 5 Cups strawberries * sliced
- 1/2 cup granulated sugar
- 1 teaspoon cornstarch
Crumble Topping
- 1/4 cup NILLA Wafer crumbs
- 1/4 cup rolled oats
- 1/4 cup all purpose flour
- 1/4 cup brown sugar
- 2 tablespoons butter * cut into small pieces
Instructions
- Preheat your oven to 350°F
NILLA Wafer Pie Crust
- Add the entire box of NILLA Wafers to a food processor bowl and process until they are turned into fine crumbs.
- Take out 1/4 cup of the crumbs and set aside.
- Pour the remaining crumbs into a medium bowl and mix in the melted butter until the crumbs just start to stick together.
- Dump the crumbs into a pie pan and press them firmly into the bottom of the pan and up the sides.
- Bake for 10-12 minutes. Set aside.
Strawberry Pie Filling
- While the crust is baking, slice the strawberries into bite-sized pieces.
- Take 1 cup of the strawberries and add them to a sauce pan with the sugar and corn starch.
- Bring the mixture to a boil while mashing the strawberries. Remove from heat.
- Place the remaining strawberries into the pie crust and top with the strawberry mixture.
Crumble Topping
- Add the oats, 1/4 cup of NILLA wafer crumbs, flour, brown sugar, and butter pieces to a small bowl and mash with a fork until a crumble forms.
- Spread the crumbles over the strawberries.
- Bake for 25-30 minutes or until the crumble is lightly browned.
- Place the pie in the refrigerator for a minimum of 4 hours to set.
