Strawberry French Toast

Strawberry French Toast is a stuffed french toast recipe filled with sweet cream cheese and fresh strawberries. It’s the best breakfast or brunch recipe when you’re craving something lightly sweet and incredibly delicious.

One of your favorite comfort foods from your childhood just got a glow-up! Strawberry stuffed French toast is rich and sweet and just downright gorgeous.

It is absolutely perfect for a Mother’s Day brunch, Easter breakfast, or when you’re craving something extra special. 

This is a sweet twist on my Apple Stuffed French Toast. 

Why This Recipe Works

Even though it looks like a fancy breakfast recipe, it’s actually quick and easy! If you can make French toast, then you can make this version too. 

It’s a delicious combination of sweet cream cheese and fresh, juicy strawberries. Try it with fresh strawberries from the farmer’s market – you won’t believe how good it tastes! 

You can enjoy this recipe any time of day. Make it for breakfast, brunch, or even dinner. 

Step-By-Step Instructions

Ingredients

  • 4 eggs
  • 1/2 cup whole milk: you can also use half-and-half.
  • 1 teaspoon vanilla extract: use pure vanilla extract for the best flavor.
  • 8 ounces cream cheese (at room temperature)
  • 1/2 cup powdered sugar
  • 8 slices bread: you can use any type of bread that you like. Sourdough, Challah and especially Brioche bread work excellent in this recipe. Thick slices also work best to soak up the egg mixture, without making the bread so soggy it falls apart.
  • 1 cup fresh strawberries (sliced thin): you can swap out the strawberries for blueberries or raspberries.
  • 1/2 teaspoon cinnamon
  • 1 tablespoon butter or nonstick cooking spray (for cooking)

Prep!

Set the cream cheese out about an hour before you are ready to cook to allow it time to come to room temperature and soften.

Thinly slice the strawberries.

If you are using a griddle, preheat it to 350°F.

Create!

Whisk together the eggs, milk, and vanilla extract in a medium bowl. Set aside.

Beat the cream cheese and powdered sugar together with a stand mixer fitted with a paddle, or a hand-held mixer, until light and creamy.

Spread 1 tablespoon of the cream cheese onto a slice of bread and top with the strawberries. Spread another tablespoon of cream cheese onto a second slice and press over the strawberries to seal the two pieces of bread together. Repeat with the remaining bread, cream cheese, and strawberries.

If using a flat bottom skillet, rather than a griddle, melt 1 tablespoon of butter in it over medium heat. You can use cooking spray instead of butter, if preferred.

Dip each “sandwich” into the egg mixture until very wet and let the excess drip off.

After removing each sandwich, place it directly on to the hot griddle.

Allow to cook for 1-2 minutes or until golden brown on the bottom. Before flipping, sprinkle a pinch of cinnamon onto each slice.

Tips and Techniques

  • If using very thick bread, you can cut a pocket into one side of the crust and stuff the cream cheese and strawberries inside, rather than make a “sandwich.”
  • Store leftovers in an airtight container in the refrigerator. Consume within a day or two at the most, for best results.

What Is The Best Bread For French Toast?

The best types of bread for French toast are brioche, challah, sourdough, or even French bread, though any type of bread can be used.

Is French Toast From France?

Nope! While French toast was not created in France, the French do have their own version which they call “pain perdu,” which means “lost bread.” Versions of French toast date back as far as the Roman Empire.

Can You Freeze French Toast?

Yes. Lay out the slices of French toast on a baking sheet and place in the freezer. Once frozen, transfer to an airtight container or freezer bag. Use within 3 months for best results.

How Do You Reheat French Toast?

You can reheat French toast in the microwave on 20-second intervals until hot or on a baking sheet in an oven preheated to 350°F for just a couple of minutes. Some people even like to reheat single slices of French toast in the toaster. 

If your French toast is frozen, you will need to add a little extra cooking time.
