As soon as I first saw spiralized vegetables, I knew I had to have them. I was a vegetarian for over 10 years and think I might have stuck with it even longer if there were more options like we have now.
I definitely was not a fan of spaghetti, which seemed to be the go-to vegetarian option at restaurants along with salad. If there would have been zucchini or sweet potato noodles, like in this Spiralized Sweet Potato recipe or Zoodles Mac and Cheese, I would have been all over it.
Things are definitely more creative and tastier now, and this recipe is an easy example of how you can enjoy vegetables in a delicious, yet fun, way.
Why This Recipe Works
From start to finish this dish takes just about 20 minutes to make.
It pairs perfectly alongside most meats and seafood or can be enjoyed on it’s own as a vegetarian meal.
You can easily adapt this recipe to fit your own taste or needs. Enjoy is as is, or add chicken or beef and maybe even some cheese to bulk it up into a main dish for dinner.
How To Make Spiralized Sweet Potatoes
Ingredients
- Be sure to set your butter out ahead of time so that it can come to room temperature. This will make it much easier to blend.
- My honey is from Peachblossom Apiaries in Maryland. It’s not as overly sweet as a lot of honey you find in grocery stores. If you use a local honey (which I highly recommend!), you may find that you need to use a little extra.
