Every year, when the weather starts turning warmer, I have the best intentions when it comes to using the grill more often. Since I don’t do the actual grilling (I have a ridiculous fear I’m going to blow it up somehow), I really love foil packet dinners because they can just as easily be baked in the oven, if needed.
My favorite foil packet dinner was Grilled Sausage, Cabbage, and Potatoes, but since I’m not eating potatoes, I came up with a couple of new ideas including this recipe for Keto Sausage and Pepper Foil Packets with Cauliflower that are lower in carbs. There are only 6 net carbohydrates per packet!

How to Make Sausage and Pepper Foil Packets with Cauliflower
Prep!
The majority of the prep work for this recipe requires a bit of slicing and dicing. You need to slice each sausage link into 8 rounds, the peppers into thin strips, and the shallot into thin slices. Mince the garlic and roll the basil leaves together and cut into ribbons.
Preheat oven to 400°F or grill to 350°F. Lay out 4 pieces of foil, each about 2 feet long.
Tip: you can do all the prep work ahead of time, if you prefer.
Create!
Divide the cauliflower evenly over each and season with salt and pepper.
Top each pile with 8 slices of the sausage and 1 tablespoon of butter.
Fold the foil over the top and roll up all the edges tightly to prevent extra butter and juices from leaking out.
Bake in the oven for 30-35 minutes or until the cauliflower is fork-tender.
If grilling, cook for 15 minutes, then check the cauliflower for fork-tenderness. You may need to continue grilling for another 5-10 minutes.
Present!
Once packets are done cooking, open and top with fresh basil. Enjoy right out of the foil, or turn over carefully onto a plate. Enjoy!
