The first time I ever saw aioli on a menu, I probably wondered what heck it was and moved on to something more familiar. Like so many other delicious foods, I passed this one by for far too long! Now, I can’t get enough. I first used Roasted Garlic Lemon Aioli as a sauce for Lemon Garlic Shrimp Cakes, and now I use it in all kinds of ways!
So what exactly is aioli? It’s traditionally a Mediterranean condiment made with olive oil, garlic, and sometimes other emulsifiers, like eggs. Here in America (and probably plenty of other places), we often take a short cut and use mayonnaise.
I haven’t attempted a traditional aioli yet, but am definitely planning to someday. However, in the meantime, this super quick and easy recipe for my version of Roasted Garlic Lemon Aioli is plenty delicious to hold me over!
Why This Recipe Works
- This is a very quick and easy recipe to make, so long as you already have roasted garlic on hand. If you are roasting your own garlic, you can follow my tutorial on how to roast garlic – it’s also very easy, but does take a little time.
- This aioli is full of roasted garlic flavor, and the lemon adds a little tang to it. They make the perfect pair!
- You can use this aioli in so many different ways. As a sauce, a sandwich spread, or as a dip are some common ways it’s used.
- Aioli is a low carb, gluten free condiment. It’s a great way to add more flavor to your favorite recipes!
How to Make Roasted Garlic Lemon Aioli
Prep!
Roasting garlic does take a little time, so you will want to have that done and ready to go before you start preparing the aioli.
Create!
Mix together the mayonnaise, roasted garlic, lemon juice, and lemon zest until well blended.
Present!
Serve this aioli in a small bowl with a spoon or spreader.
Tips and Techniques for the Best Roasted Garlic Lemon Aioli
- I strongly recommend using fresh garlic and lemon juice. I’ve made it in a pinch with jarred garlic and bottled lemon juice, and while it’s still tasty, you can definitely tell something is missing.
- If you follow a strict keto diet, be sure to use a mayonnaise that does not contain soy, like Sir Kensington’s Avocado Oil Mayonnaise.
- Store leftover aioli in an air-tight container in the refrigerator. Use within 2-3 days.

- Can you make aioli ahead of time? Yes, you can make aioli ahead of time and store it in the refrigerator tightly covered. Keep in mind that it should be used within 2-3 days.
- Can you freeze aioli? You can not freeze a mayonnaise-based aioli.
- What do you use aioli on? Aioli is especially delicious when paired with chicken, seafood, and vegetables, such as potatoes. It’s also great on sandwiches, wraps, and as a vegetable dip.
