Asparagus season is in full swing. One of my favorite ways to enjoy this vegetable is sautéed in olive oil with just a little salt and pepper. So simple, so delicious.
But, sometimes you just want a little more.
Prosciutto is an Italian dried ham often compared to bacon, but thinner and less greasy. It’s easy to wrap around individual asparagus spears and crisps up quickly, giving your asparagus a flavorful, salty bite.

How to Make Prosciutto Wrapped Asparagus
What You Need To Make This Recipe
To make this recipe you will need:
- 1 pound of asparagus
- 6 ounces prosciutto
- 1 tablespoon extra virgin olive oil
- 2 tablespoons Parmesan cheese
- 2 tablespoons sliced almonds
Prep!
Cut the woody ends off of the asparagus, rinse, and pat dry. Slice the prosciutto in half.
Tip: if your asparagus is very thin, like the ones pictured here, you might want to cut the prosciutto into thirds instead. You just need enough prosciutto to wrap it around each spear twice.
Thin single asparagus spears are just fine when making this recipe in a skillet (as instructed below), but will cook too quickly under a broiler or on a grill. You can also wrap several spears into bundles and cook under a broiler for a few minutes, watching closely to prevent burning.
Create!
Wrap one piece of prosciutto around each spear and press to stick it to itself. Repeat for all of the remaining spears and prosciutto.
Tip: separating prosciutto can be tricky. If it tears, don’t worry. You can wrap multiple smaller pieces around the spears, if needed.
Heat the olive oil in a large skillet over medium heat. Add the asparagus spears and cook, turning often, until the prosciutto is browned and crisp. This takes just 2-3 minutes. You may need to work in batches.
Present!
Arrange the asparagus spears on a serving tray. Sprinkle on the Parmesan cheese and almond slices and serve.
