30-Minute Orange-Chipotle Pork Chops
PREP: preheat your oven to 350 degrees F. Set up your blender or food processor. Lay the pork onto a broiler pan and pat dry.
Place the orange juice, chipotle peppers, and garlic into the blender. Process until smooth. Season the pork chops with salt and pepper, then brush on the orange-chipotle glaze.
Bake for about 20 minutes, or until the internal temperature reaches 145 degrees F. Garnish with fresh chives, or other herbs of your choice, if desired.
- To make a milder kid-friendly sauce, use 1 Tablespoon of the adobo sauce the chipotle peppers are packed in and mix with 1/2 C of orange juice. I just pour a little over the pork chops before and after cooking.
