20-Minute Garlic Parmesan Shrimp and Pasta
Have an impressive dinner on the table in just 20 minutes with this easy recipe for Garlic Parmesan Shrimp and Pasta!
PREP: Start boiling the water for pasta as soon as possible. If you are using frozen shrimp, make sure they are completely thawed before you begin. Whisk together the 2 Tablespoons of stock and flour and set aside. Chop the parsley and set aside as well.
As soon as the water for the pasta starts boiling, add the pasta and cook according to the directions on the package.
In the meantime, melt the butter in a large skillet over medium heat. Add the garlic and cook for 1-2 minutes until fragrant, then add the remaining stock and heavy cream. Whisk in the flour mixture and Parmesan cheese. Keep whisking to prevent lumps. Turn the heat to medium-high and bring to a boil, then lower and simmer until thickened, whisking frequently. Add salt and pepper to taste. Mix in the shrimp and cooked pasta and heat through.
PRESENT: Add the pasta to a large pasta bowl and toss to evenly distribute the shrimp. Top with fresh, chopped parsley. Serve hot.
To change things up a bit try adding a cup of peas to the mixture, or top with breadcrumbs for some added texture. This meal also pairs well with garlic bread.
