The inspiration for this recipe comes from a sports bar in Rhode Island, where I first ate pulled pork nachos. I don’t recall the rest of the toppings they used, and they definitely used tortilla chips, but I knew the flavor of plantain chips would work very well with BBQ pulled pork.
Plantains are wonderful complimented by a little bit of sweetness, like in my recipe for Sticky Sweet Fried Plantains. Pulled Pork Nachos on Plantain Chips gets a bit of sweetness from the barbecue sauce, which is super tasty paired with sweet and salty plantain chips. How To Make Pulled Pork Nachos
Ingredients
- Pulled Pork: leftover, store-bought or freshly made, if needed.
- Plantain Chips: you can use either sweet plantain chips or savory plantain chips. I prefer sweet plantain chips in this recipe.
- Black Beans: canned, drained and rinsed.
- Cheddar Cheese: you can use pepper jack or even a Mexican blend, if preferred.
- Toppings: shown here are tomatoes, jalapeño pepper, cilantro, sour cream and guacamole, but you can add any of your favorite nacho toppings. More suggestions are listed further down.

Prep!
If you are not using leftover or store-bought pulled pork, you will need to prepare that first.
Shred the cheese.
Preheat your oven to 425°F.
Chef’s Tip: shred the cheese from a block for the best melting and texture. Pre-shredded bags of cheese contains added starch. While it can be used, it’s not ideal.
Create!
Spread out plantain chips out onto a baking sheet. You can spread them into a thinner, single layer or stack them higher. If you want to stack them higher, only spread half of the chips out or use a cast iron pan. Make two layers of chips, pork, black beans and cheese using the directions below.
Warm the pork on the stove top or in the microwave and stir in the black beans. Warmed pork will spread out onto the chips much easier.
Dollop the pulled pork and black beans over the top of the plantain chips.
Sprinkle the cheese evenly all over the top.
Bake for about 5 minutes, watching closely, or until the cheese is melted and hot.
Present!
Top with your favorite nacho toppings and dips just before serving.
