Peanut Butter Energy Balls with Chocolate Chunks

Peanut Butter Energy Balls are simple and delicious, no-bake bites of energy packed goodness. Each ball is made with peanut butter, oats, honey and chocolate. These tasty little treats are the perfect snack anytime of the day.

Energy balls are a treat that I used to make for my now teenage son and I when he was just a few years old. It’s such a quick and easy recipe to make and a better-for-you choice of snack.

They remind me of these Oat & Peanut Butter Chocolate Chip Cookies, another old favorite of ours.

This recipe is made with just a handful of quality ingredients. SCHARFFEN BERGER Unsweetened 100% cacao dark chocolate cocoa powder and SCHARFFEN BERGER Semisweet 62% cacao dark chocolate baking chunks are both used in this recipe to carry rich, indulgent flavor into every bite.

SCHARFFEN BERGER actually travels the world to find the finest cacao, then roasts and blends the beans together to create their signature flavor. The flavor of the cacao really comes through including, notes of chocolate, fruit, spice, floral, tobacco, leather, woody, and earthy tones.

Why This Recipe Works

These energy balls are made with pantry staples that you may have on hand regularly. Many energy balls are make with coconut or dates, and while I do love those flavors, I rarely have all of the ingredients for them on hand at any given time. 

This is a super quick and easy recipe to whip up and it only requires 5 ingredients. 

Energy balls are a great choice for a burst of energy before working out or as pick-me-up for the dreaded mid-day slump. They are full of healthy fats and complex carbohydrates to give you longer lasting energy.

How To Make Peanut Butter Energy Bites

Ingredients

  • Peanut Butter: I use natural peanut butter, but any type will work. The amount of honey or oats may need to be adjusted slightly depending on how creamy the peanut butter is.
  • Old Fashioned Rolled Oats: you can also use quick oats. It is totally fine to eat raw oats in energy balls.
  • Honey
  • Cocoa Powder: I use SCHARFFEN BERGER Unsweetened 100% cacao dark chocolate cocoa powder.
  • Chocolate Chunks: I use SCHARFFEN BERGER Semisweet 62% cacao dark chocolate baking chunks.

Prep!

There is really no prep work for this recipe other than to gather your ingredients.

Create!

Mix together the peanut butter and honey with a spatula or spoon.

Stir in the oats, SCHARFFEN BERGER Unsweetened 100% cacao dark chocolate cocoa powder, and SCHARFFEN BERGER Semisweet 62% cacao dark chocolate baking chunks.

Roll spoonfuls of the dough into tightly packed, 1-inch balls. You will get approximately 15 energy balls.

Place on a sheet pan and chill in the refrigerator for about 20 minutes.

Present!

Serve immediately or transfer the energy balls to an airtight container and store in the refrigerator for up to 1-2 weeks.

Ingredients

  • 1/2 cup peanut butter
  • 1/4 cup honey
  • 1 cup old fashioned rolled oats
  • 1 tablespoon cocoa powder (I use SCHARFFEN BERGER Unsweetened 100% cacao dark chocolate cocoa powder)
  • 1/4 cup chocolate chunks (I use SCHARFFEN BERGER Semisweet 62% cacao dark chocolate baking chunks)

Instructions

  • Combine the peanut butter and honey.
    1/2 cup peanut butter, 1/4 cup honey
  • Mix in the oats, cocoa powder and chocolate chunks. The mixture should be thick and tacky, but not dry. If mixture is too dry, gradually add more honey. If it is too wet, gradually add more oats.
    1 tablespoon cocoa powder, 1 cup old fashioned rolled oats
  • Roll spoonfuls of the mixture into approximately 15 1-inch round balls. Place on a sheet tray.
  • Refrigerate for 20 minutes, then transfer to an airtight container and store in the refrigerator to enjoy as desired.
