March 2019 Sun Basket Review
Packaging
Note: These packaging photos are from my last Sun Basket, as my box was badly damaged in shipping this time around. Thankfully, all of the food was in good condition still and the proteins ended up wedged between both of the large ice packs.
Sun Basket ships your ingredients in an insulated box. Both the box and insulation are 100% recyclable.
Each recipe’s ingredients are packaged together in a paper bag. The ingredients inside are packaged in smaller paper bags, #4 plastic bags, and #1PET containers with #5 plastic lids. These can either be reused or recycled so long as your facility accepts these types of plastic.
Under the bags is a cardboard divider and under the cardboard divider you will find the proteins on top of one large ice pack. This ice pack can be reused, or drained into the trash or compost bin. The outer plastic wrap can be recycled in areas that accept #4 plastic.
Personally, the only trash that I have from Sun Basket are the wrappers the meat comes in and even these could be thoroughly cleaned and recycled.
Also included is a booklet with all of the week’s recipes in it as well as a few other articles.
My 3 Sun Basket Recipes
Lettuce-wrapped Lemongrass Salmon Burgers with Crunchy Asian Slaw
In my last Sun Basket review, I mentioned how much I love lemongrass. As soon as I saw these lemongrass salmon burgers on the menu, I knew I had to have them!
The burgers came already prepared and ready to cook, the dressing was partially prepared, and the vegetables for the Asian slaw were already prepped. All of this saved so much time and this recipe was ready in about 15 minutes (it’s one of Sun Basket’s Super Speedy meals).
I loved this entire recipe. The salmon burgers with the lemongrass were very flavorful, but the cashew-lime dressing was my favorite part. I could have eaten it by the spoonful, it was so good!
This recipe is definitely a winner!
Roasted Salmon and Broccoli with Almond-date Tapenade
This Roasted Salmon recipe was another super easy recipe to make. Some of Sun Baskets recipes do take a little longer, but most are very similar to these in the time and effort it takes complete them.
With this recipe, you roast the salmon and broccoli together in the oven. While those are roasting, you prepare the Almond-date Tapenade and harissa tahini sauce.
Full disclosure – I can’t eat the tapenade because the of the sugar content of the dates, but I did take a small bite so that I could accurately tell you that this tapenade is a delicious blend of sweet and savory and chewy and crunchy. My fiancé ended up eating almost the entire bowl full and kept mentioning how good it was.
I did feel the harissa tahini sauce needed a little more lemon or something, but all together, the entire recipe worked out great!
Sumac Chicken with Berry and Roasted Cabbage Salad
Before I get into the flavors of this recipe, I do have to note that I didn’t receive the correct meat. I was supposed to receive chicken breasts and instead I had ground turkey in my box. I didn’t notice the mistake until I was halfway done preparing the meal. Thankfully, I had some chicken breasts that I could swap in, but I would have probably ended up making sumac turkey burgers if not.
Mistakes happen and I wasn’t upset about it. I did reach out to Sun Basket to see how they would typically handle this kind of error. I was informed that with this kind of mistake, Sun Basket would issue you a new box.
Also, in the recipe book, the image shows blackberries, but the ingredient list says blackberries or other berries. I received blueberries instead which was totally fine with me. I love all berries.
The sumac chicken was simple, yet really delicious. And, I learned that roasted cabbage is my new favorite food. It was absolutely perfect with the blueberries, watermelon radishes, and a simple lemon dressing.
This was an incredibly easy recipe to make and one I will definitely make again!
