A roasted ham is always a popular choice for special occasions and holiday dinners for Christmas and Easter. An easy way to elevate the flavor is to add a simple glaze.
This Maple Brown Sugar Glaze is made with just pure maple syrup, brown sugar, apple cider vinegar and Dijon mustard to give it the perfect balance of sweet and savory.

Why This Recipe Works
The glaze is very easy to make. It’s as simple as adding all of the ingredients to a sauce pot and simmering until it’s thickened. It then gets brushed over the ham during the last 20-30 minutes of roasting.
There are no unnecessary ingredients. Sometimes a glaze will come with a ham when you buy it from the store. That glaze typically has additives and preservatives that you don’t need when making it homemade.
The glaze can be used in other ways, such as on a pork tenderloin or chicken breasts.
Step-By-Step Instructions
Ingredients
- 1 10-12 pound bone-in, spiral cut ham
- 3/4 cup brown sugar (packed)
- 1/4 cup Dijon mustard
- 1/4 cup pure maple syrup
- 2 tablespoons apple cider vinegar
Chef’s Tip: if desired, you can add spices like cinnamon, ginger or allspice to the glaze.

Prep!
Preheat your oven to 325°F.
Line a large roasting pan with aluminum foil for easier clean up. Place the oven rack in the center of the oven.
Create!
Place the ham in the roasting pan cut side down. Add enough water to the pan to come up the sides about 1/2-inch.
Cover the pan tightly with aluminum foil. Cook for about 2 hours, or until the ham reaches 125°F on a meat thermometer inserted into the center, not touching the bone.
While the ham is roasting, prepare the glaze.
Add the brown sugar, Dijon mustard, maple syrup and apple cider vinegar to a sauce pot over medium heat. Bring to a simmer, stirring often. Lower the heat to keep the glaze at a simmer until it’s thickened and darkened in color, about 20 minutes.
When the ham reaches the 125ºF temperature, brush the glaze over it and in between the spiral cut slices. Return it to the oven, uncovered, and cook about 30 minutes longer, or until it reaches an internal temperature of 140°F.
Remove the roasting pan from the oven and cover it with the foil for 10 minutes to rest.
Present!
Slice and serve.

- Store leftovers in an airtight container in the refrigerator. Consume within 3-5 days.
