Broccoli Chicken Bake is a simple dinner recipe that is perfect for busy weeknights. It’s full of oh-so-good cheesy broccoli and chicken and topped with crunchy sliced almonds. Each serving has only 5 net carbs making this meal a great choice for those following a keto diet.

Even though I love creating recipes of my own, I still really enjoy cookbooks. I love discovering new recipes or even common recipes made with a twist.

This Broccoli Chicken Bake from the Easy Keto in 30 Minutes cookbook is similar to a broccoli chicken casserole, but without the rice or pasta. I especially love the texture and crunch that the sliced almonds on top bring to the dish. It’s so good!

You can use ingredients including rotisserie chicken and frozen broccoli to make this recipe even quicker.

How to Make Broccoli Chicken Bake

Ingredients Needed to Make This Recipe

To make this recipe you will need:

  • 4 cups frozen broccoli florets, thawed
  • 3 cups chopped rotisserie chicken
  • 1 ½ cups shredded cheddar cheese
  • ½ cup heavy whipping cream
  • 2 teaspoons chicken bouillon paste (optional)
  • 1 teaspoon black pepper
  • ½ cup sliced almonds
  • ¼ cup shredded Parmesan cheese

Prep!

Preheat the oven to 400°F. Spray a 9-inch square baking dish or 9-inch pie plate with cooking spray.

Tip: If you aren’t using a rotisserie chicken or leftover chicken, you will need to cook your chicken first. I found that 3 cups of shredded chicken equals about 1.25-1.50 pounds of chicken.

Create!

In a large bowl, stir together the broccoli, chicken, cheese, cream, bouillon paste (if using), and pepper.

Pour the mixture into the prepared pan.

Top with the almonds and Parmesan cheese.

Bake until hot and bubbling, 15 to 20 minutes.

Let stand 5 minutes before serving.

Tips and Techniques

  • Use rotisserie chicken to make the recipe quicker and easier but you can cook our own. You will need about 1.25 to 1.50 pounds to get 3 cups.
  • Use frozen broccoli florets to also reduce the prep time, but you can use fresh broccoli without needing to change bake time.
  • Store any leftovers in an airtight container in the refrigerator. Use within 3-4 days.

Do You Have To Cook Chicken Before Putting It Into A Casserole?

You don’t always have to cook chicken before using it in a casserole, but it’s best to follow the instructions in the recipe. The recipe has likely been tested multiple times with great success the way it is written.

      That can be hard! I try to recreate old favorites in a more keto friendly way. I struggle with not having time to prepare foods – especially in the morning. Trying to come up with some good solutions for that too 🙂

    I am not a Keto follower (yet). I am allergic to dairy (all dairy sadly) and am very careful with whatever I eat because of that. I do watch my carb intake as well.

      I did a month of no dairy while on keto when my weight loss stalled. Worked like a charm. But I feel for you. I struggled that month!
