Honey Lime Vinaigrette is a sweet and tangy salad dressing that it very quick and easy to prepare. It can be used in so many different dishes from salads to grain bowls to roasted meats and veggies.

I first used this Honey Lime Vinaigrette on my recipe for Shrimp Quinoa Salad, but the sweet, tart flavor is so delicious that it can be used in many types of salads, side dishes and more.

It’s made with fresh lime juice and cilantro which is balanced out with honey, garlic and olive oil. You can always adjust the ratios of all of the ingredients to suit your own tastes, if you like your dressing more acidic or more sweet.

Why This Recipe Works

Homemade vinaigrettes and salad dressings are usually very easy to make. You only need 7 ingredients, including salt and pepper, and less than 10 minutes to make this recipe.

This recipe has the best sweet and zesty flavor. Using fresh lime and cilantro is important!

It can be used in many different ways. While I originally made this dressing to pair with a quinoa-based salad, it’s also great on more traditional leafy green salads, with Southwestern salads or bowls, on corn on the cob or in street corn salads. It can also be used on roasted or grilled beef, pork or chicken, or as a drizzle over vegetables.

Step-By-Step Instructions

Ingredients

  • 1/2 cup extra virgin olive oil: use a good quality olive oil for the best tasting salad dressings.
  • 1/2 cup lime juice (freshly squeezed): fresh is recommended, but bottled lime juice can be used. I find that bottled lime juice just doesn’t taste the same.
  • 2 tablespoons fresh cilantro: fresh cilantro is highly recommended. In a pinch, dried could be used.
  • 2 tablespoons honey
  • 1 clove garlic
  • salt (to taste)
  • pepper (to taste)

Prep!

Juice the limes. If you are not using a blender, you will need to mince the cilantro and garlic.

Create!

Add all of the ingredients to a smoothie blender cup and blend on low until smooth. Taste and adjust seasonings, as needed.

If making the dressing by hand, add the lime juice, honey, minced cilantro and garlic to a medium bowl. While whisking, slowly add the olive oil until it is fully emulsified. Taste and adjust seasonings, as needed.

Present!

Tips and Techniques

  • Use fresh lime juice and cilantro for the best flavor. Bottled lime juice and/or dried cilantro can be used, but the flavor won’t be quite the same.
  • To make the dressing by hand, add the lime juice, honey, minced cilantro and garlic to a medium bowl. While whisking, slowly add the olive oil until it is fully emulsified. Taste and adjust seasonings, as needed.
  • Store extra vinaigrette in an airtight container in the refrigerator. Consume within 3 days for the best results.

Ingredients
