I never find it difficult to develop recipes. I literally have sheets and sheets of papers full of ideas that I either create completely from scratch, or ideas that are inspired by foods I’ve eaten out and loved. This recipe for Herb & Gorgonzola Steak Butter is inspired by a recipe I tried many years ago. I was reminded of it when eating a steak and blue cheese pasta dish at a restaurant a few weeks back and decided to attempt to make it myself. I’m really particular about red meat, and prefer grass fed beef so I decided to try it on PRE brand steaks.
PRE is a pretty unique meat company! The packaging alone is pretty awesome! The meat comes in a sealed plastic film attached to PRE’s cardboard packaging. You can flip the steak up to see the back side as well. I absolutely love this! I can not even tell you how many times I have opened a package of meat to find so much excess fat underneath, like it had been hidden on purpose!
Another awesome packaging feature is that you can tear off the film on one side, season your meat, and flip it into a hot pan without having to touch it with your bare fingers! I know some people won’t care about that, but it’s a great little bonus for us germ-a-phobes! You will also find information about the company, a recipe, general cooking instructions, nutritional facts, and safe handling instructions on the package. So, even if your not very experienced cooking a steak, you can still make a restaurant quality meal by following the incredibly simple cooking instructions provided!
Enough about the packaging, let’s talk about the meat itself. PRE only uses 100% grass fed beef. There are also no added hormones or antibiotics. They are taking a modern approach to old-fashioned methods to bring you the best beef on the planet! You really can taste the difference!
Herb & Gorgonzola Steak Butter Recipe
Make this Herb & Gorgonzola Steak Butter ahead of time or before you start cooking the remainder of your meal. Just store it in your refrigerator until you need it.
All you will need to make this recipe is all of the ingredients, a small bowl, fork, cutting board, and chef’s knife.
Finely chop the parsley and garlic. Place the butter, Gorgonzola cheese, parsley, and garlic into the small bowl. Mash with a fork until well combined.
I usually roll it into a log shape so that you can slice it like a stick of butter and place it on top of your steaks to melt.
After your steaks are done cooking, plate them and top with the Herb & Gorgonzola Herb Butter. Garnish with fresh parsley, if desired.

Herbed Gorgonzola Steak Butter
- 4 tablespoons unsalted butter * at room temperature
- 4 tablespoons Gorgonzola cheese
- 1 clove garlic * minced
- 1 teaspoon fresh parsley * minced
- Place the butter, Gorgonzola cheese, garlic and parsley into a small bowl. Mash with a fork until well combined.
- Roll into a log, if desired, and store in the refrigerator until ready to use.
- Serve on top of hot steaks and allow to melt.
Tips and Techniques
- For the best flavor, use fresh garlic and parsley.
- Roll the butter into a log before placing it in the refrigerator to make it easy to slice into individual plats. Or, while the butter is still soft, push it into silicone chocolate molds to create designs.
- Store extra Gorgonzola butter in an airtight container in the refrigerator. You can store this butter for as long as the Gorgonzola cheese is good for. You can also freeze this butter, tightly wrapped, for up to 2 months.
