Give your steak a little extra richness and bite with a pat of this delicious Herbed Gorgonzola Steak Butter. It’s an easy-to-make compound butter that enhances the flavor of a perfectly cooked steak even more.

A perfectly cooked, high quality steak needs no accompaniments, that’s for sure. But, that doesn’t mean it won’t taste just as amazing with a little something extra every once in awhile.

This recipe for Herbed Gorgonzola Steak Butter is inspired by a recipe that I had many years ago and loved. I was reminded of it again when eating a steak and blue cheese pasta dish at a restaurant and just had to recreate the butter.

Try topping your next steak with this butter – you will not be disappointed.

Why This Recipe Works

It’s so easy to whip up a tasty compound butter. You can make it ahead of time and even freeze it, if necessary.

While most people will enjoy something more simple like a Garlic Herb Steak Butter, some might like a little something more and Gorgonzola definitely brings the flavor.

This steak butter isn’t meant to cover up the flavor of the steak. It’s meant to enhance the flavor. It’s absolutely delicious.

How to Make Gorgonzola Steak Butter

Make this Herb & Gorgonzola Steak Butter ahead of time or before you start cooking the remainder of your meal. Store it in your refrigerator until you need it.

What You Need to Make This Recipe

To make this recipe you will need butter (preferably unsalted), Gorgonzola cheese, garlic, and fresh parsley.

Prep!

Set the butter out to come to room temperature about 30-60 minutes ahead of time.

Mince the garlic and parsley.

Tip: it is highly recommended to use fresh garlic (not jarred) and parsley for this recipe.

Create!

Place the butter, Gorgonzola cheese, garlic and parsley into the small bowl. Mash with a fork until well combined.

Refrigerate until needed.

Tip: you can roll the butter into a log before placing it back in the refrigerator to give it a round shape when serving. You can also use chocolate molds to make different designs, if desired.

Present!

Cut the butter into pats and set on a plate or in a bowl.

After your steaks are done cooking, plate them and top with a pat of the Gorgonzola Butter while they are still hot. Allow the butter to melt, then enjoy.

Tips and Techniques

  • For the best flavor, use fresh garlic and parsley.
  • Roll the butter into a log before placing it in the refrigerator to make it easy to slice into individual pats. Or, while the butter is still soft, push it into silicone chocolate molds to create designs.
  • Store extra Gorgonzola butter in an airtight container in the refrigerator. You can store this butter for as long as the Gorgonzola cheese is good for. You can also freeze this butter, tightly wrapped, for up to 2 months.

FAQ’s

Is Gorgonzola Blue Cheese?

Yes, Gorgonzola is an Italian variety of blue cheese. It’s often classified on it’s own rather than under the more generic “blue cheese” term due to it’s milder flavor and softer texture.

Can I Substitute Blue Cheese for Gorgonzola?

You can definitely swap out the Gorgonzola cheese for blue cheese, however, the flavor of blue cheese is much stronger. You may want to use less, depending on your own personal taste.

Ingredients

  • 4 tablespoons unsalted butter * at room temperature
  • 4 tablespoons Gorgonzola cheese
  • 1 clove garlic * minced
  • 1 teaspoon fresh parsley * minced

Instructions

  • Place the butter, Gorgonzola cheese, garlic and parsley into a small bowl. Mash with a fork until well combined.
  • Roll into a log, if desired, and store in the refrigerator until ready to use.
  • Serve on top of hot steaks and allow to melt.

    Ah butter! Seriously one of my favorite things in the whole world. I LOVE herbed butter as well and gorgonzola is one of my fav additions. Seriously delicious!

    I’m going to have to look for PRE filet mignon — I’d never heard of it before, but I love the uniformity and the ability to really SEE what you’re getting. I agree – good steak needs no embellishment, but a gorgonzola compound butter is the thing that takes it from good to great!
