Grilled Sausage and Peppers Sandwiches are a classic summer meal that’s quick and easy to prepare. They are made with a delicious combination of grilled sweet or hot Italian sausage links, sautéed vegetables and a Dijon mustard spread.

It’s funny how our tastes change as we get older. My mom often made sausage and peppers in a variety of ways and I was never a fan.

These days I’m making, and loving, Grilled Sausage and Peppers Sandwiches for my own family. The kids love them with mild or sweet sausage, while my husband and I always opt for spicy sausage.

I like to keep the veggies simple with a combination of bell peppers, onions and garlic. I add a little tanginess with an optional spread made with mayonnaise and Dijon mustard, as well. It’s the same spread that I use on my recipe for Ham and Cheese Sliders.

Why This Recipe Works

This is a great recipe for when you want something quick and easy to make on a busy weeknight, or for summer cookouts and parties when you don’t want to spend a ton of time cooking.

It’s a classic flavor loved by many. The dijon spread is optional, but does elevate the flavor of the sausage and peppers even more.

The recipe is very adaptable. You can choose to use sweet or hot Italian sausage or even swap in chicken sausage if you’d like. Tomatoes or tomato paste can be added to the peppers and onions for more acidity, or Italian seasoning or Parmesan cheese can be sprinkled on. It’s an easy recipe to make your own.

Step-By-Step Instructions

Ingredients

Ingredients needed to make grilled sausage and peppers sandwiches on a light background with text overlay.

  • 6 Italian sausages (hot or sweet)
  • 1 tablespoon extra virgin olive oil
  • 3 bell peppers (cut into thin strips): you can use any combination of red, orange, yellow and/or green peppers.
  • 1 onion (cut into thin strips)
  • salt (to taste)
  • pepper (to taste)
  • 2 cloves garlic (minced)
  • 2 tablespoons mayonnaise (optional)
  • 2 teaspoons Dijon mustard (optional)
  • 6 deli rolls

Prep!

Preheat your grill to 450°F or medium heat. An outdoor or indoor grill can be used for this recipe.

Create!

Grill the sausage for about 5 minutes, then turn and grill an additional 5 minutes or until a meat thermometer inserted into the center reads 165°F. Remove to a plate and cover with foil to keep warm.

Add the olive oil to a large skillet over medium heat.

Add the peppers and onion. Cook until softened and starting to char, about 8-10 minutes, stirring often. 

Stir in the garlic and cook an additional 30 seconds.

Dijon and mayonnaise spread in a small glass bowl with a spreader in it.To make the sandwich spread, mix together the mayonnaise and Dijon mustard until blended.

Present!

Spread the mayonnaise and Dijon mustard onto a deli roll. Top with a sausage link, then add peppers and onions.

Tips and Techniques

  • You can use sweet or hot Italian sausage or swap in chicken sausage instead.
  • Tomatoes or tomato paste can be cooked with the peppers and onions for more acidity, or Italian seasoning or Parmesan cheese can be sprinkled in, as well.
  • Store leftovers in an airtight container in the refrigerator. Consume within 3 days.
