I get excited when the weather gets warm enough to break out the grill! My fiancé does all the grilling because I have this weird grilling-phobia – haha! I usually stick to creating the recipes, but let him toss in his 2-cents every once in-a-while.
I always forgot how easy foil packet dinners are to make and how well all the flavors blend together when you cook them. Because they are so easy, they are a great option for when you want to grill on weeknights, as well as weekends. Not into grilling? I prefer to use chicken and apple sausage with this particular recipe. It’s really delicious with the cabbage and potatoes. Because potatoes and cabbage are both pretty bland foods, you could also use pretty much any sausage variety that you prefer.

How to Make Sausage and Cabbage Foil Packets with Potatoes
Prep!
For this recipe, I have included most of the prep work in the steps to create the recipe because as you prep each ingredient, you’ll be adding it to the foil packet.
You will need 4 pieces of aluminum foil, each about 2 feet long. Preheat your grill to 325-350°F (or medium heat).
Create!
Cut the head of cabbage in half and then one half into quarters. Save the other half for another use. Cut each quarter into approximately 1-inch chunks and place onto the center of each sheet of aluminum foil.
Dice the shallot and evenly distribute it over the 4 piles of cabbage. Mince the garlic and add that evenly to each packet as well.
Cut the potatoes into bite size pieces and divide them evenly among the packets. Season each packet with salt and pepper.
Slice each sausage link into 8 pieces. Scatter them on top of the packets. Top each packet with 1 tablespoon of butter.
Fold the long edges of the foil over the ingredients, and tightly roll up the sides.
Place the foil packets on the grill and cook for about 15 minutes. After 15 minutes, open a packet and check the potatoes for fork tenderness. If needed, heat an additional 2-5 minutes, but watch closely as to not burn the cabbage.

Present!
You can eat this meal right out of the foil packets (less clean up!) or dump each one out onto a plate. Top with fresh parsley, if desired.

Made this tonight with Johnsonville Irish sausage and it came out great. I cooked it in the oven and it needed to cook for 30 minutes for potatoes to be cooked. Will be making again but next time I want to try it with sweet potatoes or other veggies.
