Grills are fired up all summer long, but primarily for cooking meats. Dinner is even simpler when the side dishes can be grilled at the same time.
These Grilled Cheesy Potatoes are sure to be on rotation all summer long. They pair well with most main dishes such as, Chipotle-Honey Barbecue Ribs and Grilled Cuban Pork Chops.

How to Make Grilled Cheesy Potatoes
Ingredients
- 1 1/2 pounds potatoes, washed and cut into 1/4-inch thick slices
- 1 1/2 cups cheddar cheese, shredded
- 2 tablespoons butter, melted
- salt and pepper
- fresh herbs, if desired for garnish

Prep!
Wash your potatoes, peel if desired, and cut into 1/4-inch thick slices.
Chef’s Tip: try to keep your potatoes at approximately the same size so that they cook evenly.
Pre-heat your grill to medium-high or your oven to 425°F.
Create!
Place the potatoes in the center of a large piece of aluminum foil or in a bowl. Melt the butter and pour over the potatoes. Season with salt and pepper and toss to coat.
Sprinkle on half of the cheddar cheese.
Wrap the potatoes tightly in the aluminum foil so that they are completely sealed.
Place the potato packet on the grill, or in the oven. Cook for 15 minutes, then flip and cook an additional 15 minutes, or until the potatoes are fork tender.
Open the top of the foil packet and sprinkle on the remaining cheddar cheese.
Leave the packet open and place it back on the grill, or in the oven. Cook for an additional 3-4 minutes, or until the cheese is melted and starting to brown.
Present!
Remove the potatoes from the grill, or oven, and sprinkle on fresh minced herbs, if desired.
Chef’s Tip: you can also top your cheesy potatoes with crumbled bacon, chives, and/or sour cream, if desired.

- Cut your potatoes into even-size pieces, about 1/2 to 1-inch in size, for even cooking.
