 This festive Chicken Tostadas recipe is so incredibly flavorful. Chunks of juicy chicken, black beans, and corn are seasoned with traditional Mexican flavors then topped with cheese and fresh veggies. Add a drizzle of Creamy Cilantro Lime Sauce and dinner is done in just 30 minutes.

What’s a tostada? It’s a Mexican meal that consists of a fried tortilla that is topped with meat, beans, and vegetables.

In this recipe for Chicken Tostadas, the tortilla is topped with a seasoned blend of chicken, beans, and corn.

Cheese, tomatoes, and cilantro are added to the top along with a drizzle of Cilantro Lime Sauce for even more flavor.

You can add lettuce, onions, or any other toppings you prefer, to make these tostadas all your own.

How to Make Chicken Tostadas

Prep!

To prepare for this recipe, cut your chicken into bite size pieces.

If you are going to make the Homemade Taco Seasoning as listed in the recipe card below, you will want to do that before you start cooking.

Chef’s Tip: you can use a packet of taco seasoning to save a little time, though homemade is always best.

Create!

Heat a large skillet over medium high and add the olive oil.

Add the cubed chicken and half of the taco seasoning. Cook thoroughly until chicken is no longer pink in the center, about 5-7 minutes.

Stir in the black beans and corn and cook for about 2 more minutes or until warmed through.

In a small bowl, combine the mayonnaise, sour cream, lime juice, cilantro, and the remaining taco seasoning. Mix well.

To serve, top the tostados with the chicken mixture, lettuce, tomato and cheddar cheese. Add a drizzle of the cilantro lime sauce.

Chicken Tostadas with Creamy Cilantro Lime Sauce

Ingredients

Chicken Tostadas

  • 1 tablespoons extra virgin olive oil
  • 1 pound boneless, skinless chicken breasts * cut into bite size pieces
  • 2 tablespoons Homemade Taco Seasoning
  • 1/2 cup black beans * canned
  • 1/2 cup corn * canned or frozen, thawed
  • 1/2 cup tomato * diced
  • 1 cup cheddar cheese * shredded
  • 8 corn tostadas

Creamy Cilantro Lime Sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 lime * juiced
  • 1/8 cup cilantro * minced

Instructions

Chicken Tostadas

  • In a large skillet, add the olive oil and heat to medium high.
    1 tablespoons extra virgin olive oil
  • Add the chicken and half of the taco seasoning.
    1 pound boneless, skinless chicken breasts, 2 tablespoons Homemade Taco Seasoning
  • Cook thoroughly until chicken is no longer pink in the center, about 5-7 minutes.
  • Stir in the black beans and corn and cook 2-3 minutes or until warmed through.

Creamy Cilantro Lime Sauce

  • In a small bowl, combine the mayonnaise, sour cream, lime juice, cilantro, and the remaining taco seasoning. Mix well.
    1/4 cup mayonnaise, 1/4 cup sour cream, 1 lime, 1/8 cup cilantro
  • To serve, top tostada shells with the chicken mixture, tomato and cheddar cheese.
    1/2 cup tomato, 1 cup cheddar cheese, 8 corn tostadas
  • Drizzle on the cilantro lime sauce and garnish with additional cilantro, if desired.

      I’ve definitely used vegenaise as a replacement for mayo and couldn’t tell a difference. For the sour cream, I know there are some dairy free versions available but I haven’t tried any of them so can’t make a recommendation based on experience, sorry.
