Prep!
To prepare for this recipe, cut your chicken into bite size pieces.

Create!
Heat a large skillet over medium high and add the olive oil.
Add the cubed chicken and half of the taco seasoning. Cook thoroughly until chicken is no longer pink in the center, about 5-7 minutes.
Stir in the black beans and corn and cook for about 2 more minutes or until warmed through.
In a small bowl, combine the mayonnaise, sour cream, lime juice, cilantro, and the remaining taco seasoning. Mix well.
Present!
To serve, top the tostados with the chicken mixture, lettuce, tomato and cheddar cheese. Add a drizzle of the cilantro lime sauce.
Tip: you can add any additional toppings that you prefer.

- 1/2 cup tomato * diced
- 1 cup cheddar cheese * shredded
- 8 corn tostadas
Creamy Cilantro Lime Sauce
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 lime * juiced
- 1/8 cup cilantro * minced
Instructions

- To serve, top tostada shells with the chicken mixture, tomato and cheddar cheese.1/2 cup tomato, 1 cup cheddar cheese, 8 corn tostadas

I’ve definitely used vegenaise as a replacement for mayo and couldn’t tell a difference. For the sour cream, I know there are some dairy free versions available but I haven’t tried any of them so can’t make a recommendation based on experience, sorry.
