Cream Cheese Stuffed French Toast is a french toast recipe filled with sweet cream cheese sandwiched between two slices of cinnamon vanilla flavored bread that is cooked until golden brown. It’s an absolutely delicious option for breakfast, brunch or dinner and pairs perfectly with flavored syrups, powdered sugar, fruit and whipped cream.

French toast has always been one of my favorite breakfast recipes. My dad used to get up early on Sunday to make us homemade breakfast and one of his go-to meals was Vanilla Cinnamon French Toast.
In this recipe for Cream Cheese Stuffed French Toast, I added a sweetened cream cheese filling between two slices of that same recipe my dad used to make.
This recipe is similar to my recipe for Strawberry French Toast but you can easily add syrup or fruit that you like. It’s very good on it’s own, but pairs beautifully with fresh fruit and powdered sugar, or just about any flavor of syrup.
Why This Recipe Works
Even though stuffed french toast can seem a bit complicated, it’s actually quick and easy to prepare. If you can make classic French toast, then you can make this version too.
It’s a delicious combination of sweet cream cheese, cinnamon and vanilla. Try it with fresh strawberries, blueberries or raspberries – you won’t believe how good it tastes!
You can enjoy this recipe any time of day. Make it for breakfast, brunch, or even dinner.
Step-By-Step Instructions
Ingredients
- 4 eggs
- 1/2 cup whole milk: you can also use half-and-half.
- 1 teaspoon vanilla extract: use pure vanilla extract for the best flavor.
- 8 ounces cream cheese (at room temperature): softened cream cheese is much easier to whip.
- 1/2 cup powdered sugar
- 8 slices bread: you can use any type of bread that you like. Sourdough, Challah and especially Brioche bread work excellent in this recipe. Thick slices also work best to soak up the egg mixture, without making the bread so soggy it falls apart.
- 1/2 teaspoon cinnamon
- 1 tablespoon butter or nonstick cooking spray (for cooking)

Prep!
Set the cream cheese out about an hour before you are ready to cook to allow it time to come to room temperature and soften.
If you are using a griddle, preheat it to 350°F.
Create!
Whisk together the eggs, milk, and vanilla extract in a medium bowl. Set aside.
Beat the cream cheese and powdered sugar together with a stand mixer fitted with a paddle, or a hand-held mixer, until light and creamy.
Spread 1 tablespoon of the cream cheese onto a slice of the bread. Spread another tablespoon of cream cheese onto a second slice of bread and press the two pieces together to seal them. Repeat with the remaining bread and cream cheese.
If using a flat bottom skillet, rather than a griddle, melt 1 tablespoon of butter in it over medium heat. You can use cooking spray instead of butter, if preferred.
Dip each “sandwich” into the egg mixture until very wet and let the excess drip off.
After removing each sandwich, place it directly on to the hot griddle or pan.
Allow to cook for 1-2 minutes or until golden brown on the bottom. Before flipping, sprinkle a pinch of cinnamon onto each slice.
Flip and cook for an additional 1-2 minutes.
Present!

Tips and Techniques
- If using very thick bread, you can cut a pocket into one side of the crust and stuff the cream cheese inside, rather than make a “sandwich.”
