Salad

  • 2 cups corn (fresh, canned or frozen and thawed)
  • 2 cups cherry tomatoes (cut in half or quartered)
  • 1 avocado (peeled and diced)
  • 1 small shallot (finely diced)
  • fresh cilantro (minced, optional garnish)

Cilantro Lime Vinaigrette

  • 1/4 cup extra virgin olive oil
  • 1/4 cup lime juice (freshly squeezed)
  • 1 tablespoons fresh cilantro
  • 1 tablespoons honey
  • 1 small clove garlic
  • salt (to taste)
  • pepper (to taste)

How to Make A Corn Tomato Avocado Salad

Prep!

Shuck the corn and place in a large bowl. If using canned corn, drain it well and if using frozen corn, thaw and drain completely.

Cut the tomatoes in half or in quarters, peel and dice the avocado and finely dice the shallot.

Juice 1-2 limes until you have 1/4 cup of juice.

Create!

Salad

Corn, tomato, avocado and shallots mixed together in a glass bowl.

Add the corn, tomatoes, avocado and shallot to a large bowl and stir gently to combine.

Cilantro Lime Vinaigrette

Add all of the ingredients to a blender cup and blend on low until smooth and emulsified. Taste and adjust seasonings, as needed.

If making the dressing by hand, mince the cilantro and garlic. Add the lime juice, honey, minced cilantro and garlic to a medium bowl. While whisking, slowly add the olive oil until it is fully emulsified. Taste and adjust seasonings, as needed.

Present!
