How to Make A Corn Tomato Avocado Salad
Prep!
Shuck the corn and place in a large bowl. If using canned corn, drain it well and if using frozen corn, thaw and drain completely.
Cut the tomatoes in half or in quarters, peel and dice the avocado and finely dice the shallot.
Juice 1-2 limes until you have 1/4 cup of juice.
Create!
Salad
Add the corn, tomatoes, avocado and shallot to a large bowl and stir gently to combine.
Cilantro Lime Vinaigrette
Add all of the ingredients to a blender cup and blend on low until smooth and emulsified. Taste and adjust seasonings, as needed.
If making the dressing by hand, mince the cilantro and garlic. Add the lime juice, honey, minced cilantro and garlic to a medium bowl. While whisking, slowly add the olive oil until it is fully emulsified. Taste and adjust seasonings, as needed.
Present!
Either mix the vinaigrette into the salad or serve on the side. Garnish with extra minced cilantro, if desired.
Tips and Techniques
- Use fresh corn when in season for the sweetest flavor.
- Dice the avocado last to keep it from browning too quickly.
- Add the dressing just before serving for the freshest texture.
- For extra flavor, lightly char the corn in a skillet before adding.
How to Keep Avocado From Browning
- Toss avocado pieces gently with a little lime juice before mixing.
- Store the salad with plastic wrap pressed directly onto the surface.
- Add avocado right before serving if making ahead of time.
Variations
- Add crumbled feta or cotija cheese for a salty boost.
- Mix in grilled chicken or shrimp for a complete meal.
- Add diced cucumber for extra crunch.
Storage
Store leftovers in an airtight container in the refrigerator for up to 2 days. For best texture, keep the dressing separate and add just before serving.
