A Clover Club Cocktail dates back to before the Prohibition period and is named after a Philadelphia men’s club that is no longer around. It was first published in The Clover Club of Philadelphia book in 1897. Any recipe, food or drink, that has been around that long must be good.
This cocktail is made with a combination of gin, raspberry and lemon. It’s refreshing and fruity in flavor with a bit of added tartness from the lemon juice. The egg white acts as an emulsifier, giving this beverage it’s signature creamy foam topping.

Step-By-Step Instructions
Ingredients
- 3 ounces gin: a high quality gin will give you the best flavor. A London dry gin is recommended.
- 1 ounce raspberry syrup (or grenadine): you can make your own Raspberry Syrup or use a store-bought one.
- 1 ounce lemon juice (fresh squeezed for the best flavor)
- 1 egg white: be sure not to get any of the yolk into the whites when separating the egg or it won’t froth as it should.
- Ice cubes
- Fresh raspberries (for garnish)

Prep!
If you plan to make your own raspberry syrup, that must be done first.
Squeeze the lemon juice and carefully separate the egg white from the yolk. The yolk can be saved for another use, if desired.
Create!
Add the gin, raspberry syrup or grenadine, lemon juice and egg white to a cocktail shaker and shake vigorously for 30 seconds.
Add ice and shake again for another 30 seconds.
Strain the cocktail through a fine mesh strainer into a coupe glass and garnish with fresh raspberries.
Present!
Serve immediately.
