No-bake Chocolate Tart

This No-bake Chocolate Tart is incredibly easy, yet is one of the most decadent desserts you will ever enjoy. The tart starts with a chocolate base simply made from crushed Oreo cookies and melted butter. The filling is a rich ganache consisting of dark chocolate, heavy cream, butter and vanilla. Topped with fresh berries, this is one show-stopping dessert.

One of the most decadent desserts we made in pastry class in culinary arts school was a chocolate tart. 

Similar to my recipe for Vanilla Crème Brûlée, this tart recipe is one of those desserts that looks so eloquent and upscale, but is so simple to prepare.

A small slice is all you need to thoroughly satisfy even the strongest sweet tooth.

Why This Recipe Works

While a chocolate tart may look pretty upscale, it’s actually a very quick and easy recipe to prepare. The hardest part is waiting for it to set!

This is a very rich and indulgent dessert. While you might think you could eat an entire tart at one sitting, a little goes a very long way.

You can decorate this tart anyway that you like to really make it your own. Fruit fruits, flowers, candy or nuts are great choices.

Step-By-Step Instructions

Ingredients

Oreo Crust

  • 39 Oreo cookies
  • 1/2 cup unsalted butter

Chocolate Filling

  • 2 1/2 cups dark chocolate (coarsely chopped): you can use a baking bar or dark chocolate chips.
  • 1 1/4 cups heavy cream
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • Pinch salt

Prep!

There is no prep work for this recipe other than to gather your ingredients and a 9 1/2 inch tart pan with a removable bottom.

Create!

Oreo cookies and butter mixed together in a food processor with chocolate and berries around it.

Add the Oreo cookies to a food processor and process until they resemble coarse crumbs. Add the melted butter and process once again until well combined and the crushed Oreos resemble wet sand.

Firmly press the Oreo mixture into the base and sides of the tart pan using your fingers, a glass or even a measuring cup. Place in the refrigerator to firm up for at least 10 minutes.

While the base is setting, make the filling by adding the chopped dark chocolate, heavy cream, butter and vanilla extract to a microwave safe mixing bowl. Microwave for 30 seconds at a time, mixing well every time the bowl is removed from the microwave, until the chocolate and butter have melted and the mixture is smooth.

Stir in a pinch of salt.

Chef’s Tip: the filling can also be made using the stovetop. Place the filling ingredients in a heatproof bowl, and sit the bowl over a saucepan of simmering water making sure the bowl does not touch the water. Stir continuously until the chocolate and butter have just melted and the mixture is smooth.

Pour the filling into the tart pan. Place the tart back in the refrigerator for at least 2 hours, or until the filling has set.

Present!

Decorate with fresh berries, or as desired, just before serving.

Tips and Techniques

  • The filling can also be made using the stovetop. Place the filling ingredients in a heatproof bowl, and sit the bowl over a saucepan of simmering water making sure the bowl does not touch the water. Stir continuously until the chocolate and butter have just melted and the mixture is smooth.
  • It is recommended to not garnish the tart until immediately prior to serving, especially if using fresh berries.
  • You can garnish the tart any way that you like. Fresh fruits, flowers, chocolate, candy or nuts are perfect for adding to this tart.
  • Store leftovers tightly wrapped in the refrigerator. Consume within 5 days.

Can You Freeze A Chocolate Tart?

Yes, a chocolate tart can be frozen. Cover the tart tightly with plastic wrap and store in the freezer for up to 3 months. Thaw in the refrigerator before serving.
