Underneath the bold peppermint flavors is a dark, rich chocolate cookie. It reminds me of a hot cup of sweet hot chocolate topped with minty deliciousness. They are the perfect combination of chocolate and mint and have a wonderfully soft and fudgy center.

Ingredients
- 1 cup granulated sugar
- 1 cup unsweetened cocoa powder
- ½ cup vegetable oil
- 2 large eggs
- 1 ½ teaspoons baking powder
- 1 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1 cup all purpose flour: we highly recommend using high-quality baking products like King Arthur brand for the best results.
- ½ cup crushed candy canes
- 15 peppermint candy kisses (unwrapped)

Prep!
Preheat oven to 350°F.
Create!
Whisk together sugar, cocoa powder, vegetable oil, eggs, baking powder and vanilla extract in a large bowl until well combined.
Gradually sift in the flour, mixing until just combined.
The batter will be thick.
Roll the dough into 15 1.5 inch balls, then roll in the crushed candy canes.
Set on a prepared baking sheet 1-2 inches apart. Flatten slightly.
Chef’s Tip: rolling the cookies in the crushed candy canes makes them extra minty. You can omit this step, if you prefer less mint flavor.
Bake for 10-11 minutes.
Allow to cool on the cookie sheet for 5-7 minutes, then press one peppermint kiss into the center of each cookie.
Chef’s Tip: it’s important to let the cookies cool just a little before adding the candy kisses or they may melt and lose their shape.
Transfer to a wire rack and allow to cool completely.
