Sweet Chili Lime Shrimp Skewers

These Sweet Chili Lime Shrimp Skewers are sweet and zesty.  Both adults and kids love them!  They are super easy to make so you can spend less time cooking and more time enjoying each other this summer season!

I keep coming up with recipe after recipe for my fiancé to cook us on the grill this summer (because you know I’m flat out scared of using the grill myself haha!).  Sure it means less cooking I have to do, but I always feel like summer flies by and we never grill as much as we’d like.

Summer hasn’t even technically begun yet and I’ve already shared a few recipes that can be made on the grill. So far my favorite are these Sausage, Peppers, and Cauliflower Foil Packets, but Sweet Chili Lime Shrimp are by far the quickest and easiest recipe yet. Not to mention, pretty darn tasty!

Why This Recipe Works

  • The glaze on the shrimp is really simple to make using a bottled Sweet Chili Sauce.  All you have to do is mix in a few additional ingredients and it’s all ready to go in just minutes!
  • Shrimp cook really quickly, so this is a great recipe for when you’re pressed for time.
  • You can make this recipe on the grill or in the oven making is a great recipe for all year long.

How to Make Sweet Chili Lime Shrimp Skewers on the Grill

Prep!

Whisk together all of the ingredients for the sauce in a small bowl.  Set aside.

Peel and devein your shrimp, leaving just the tails.  Depending on the size of your shrimp, place 6-8 on each of six skewers.

Tip: if using wooden skewers, be sure to soak them in water for at least 30 minutes prior to cooking.

Light your grill and get the temperature set around 350°F.

Place your shrimp on the grill in an area of indirect heat (we use the top rack of our grill).

Baste the top side with the Sweet Chili Lime Sauce.  Cook for 2 minutes, then rotate the skewers and baste the opposite side.  Continue grilling, basting, and rotating until the shrimp are pink and slightly opaque.

Tip: keep in mind that shrimp cook really fast when deciding what side dishes you are going to serve with them. Be sure to prepare and cook everything so it’s all done around the same time, if you can.

Present!

Remove from the grill and serve with extra cilantro and lime wedges.

I like to leave the shrimp on the skewers on a rectangular serving tray for everyone to help themselves.  If you have extra fresh cilantro, add that to the tray as well as some extra lime wedges.

How to Make Sweet Chili Lime Shrimp Skewers in the Oven

Prep!

Whisk together all of the ingredients for the sauce in a small bowl.  Set aside.

Peel and devein your shrimp, leaving just the tails.  Depending on the size of your shrimp, place 6-8 on each of six skewers.

Preheat your oven to 400°F and line a baking sheet with aluminum foil, if desired.

Create!

Baste both sides with the Sweet Chili Lime Sauce.

Bake for 3-4 minutes, then re-baste both sides again.

Return to the oven and cook for 3-4 minutes longer or until the shrimp are opaque and cooked through.

Present!

  • Store any leftovers in an air-tight container in the refrigerator. Use within 2-3 days.

  • How do you know when shrimp is done cooking? Shrimp tails will turn pink and the flesh of the shrimp with be slightly opaque. If they turn solid white, they may be overcooked.
  • What should I serve with Chili Lime Shrimp? These Sweet Chili Lime Shrimp Skewers pair great with corn on the cob and roasted potatoes, which can both also be made on your grill!

Ingredients

  • 1/2 cup sweet chili sauce
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro * or 1 tablespoon dried cilantro
  • 1 pound shrimp * peeled and deveined with tails on

Instructions

  • Whisk together the sweet chili sauce, lime juice, and cilantro in a small bowl. Set aside.
  • Depending on the size of your shrimp, place 6-8 on each skewer.

    Simple yet delicious recipe, I like the marinade you used to grilled the shrimp. Chili lime sauce is versatile. I can use to other seafood too.

    We love lime on just about everything. There is something so special about grilling shrimp — so easy and so good. We’ve made shrimp many ways but we haven’t tried it with the sweet chili sauce — we’ll have to try it.

    I always use lime on my salmon and never thought about using it on shrimp I am sure adding a little tequila to this also would be awesome I love how this looks and sounds
