Buffalo Chicken Sliders on King’s Hawaiian Rolls

Buffalo Chicken Sliders on King’s Hawaiian Rolls are rich, cheesy and a little spicy. The flavor of the zesty shredded chicken filling is perfectly balanced with the sweetness of the soft, fluffy rolls. Serve these delicious sliders as an appetizer, game day snack or as a casual dinner the whole family will love!

Two things you can never go wrong with are buffalo chicken dip and sliders made on King’s Hawaiian Rolls, which is exactly why we just had to add these Buffalo Chicken Sliders to our growing collection of recipes for both buffalo chicken and sliders.

The buffalo chicken filling is made with cooked, shredded chicken that is smothered in cream cheese, ranch dressing and buffalo sauce. We then top it with plenty of shredded cheddar cheese. A little butter, garlic and herbs are brushed on top before a quick trip to the oven.

The result? Savory, cheesy chicken sliders to be devoured by all!

Why This Recipe Works

Sliders are a quick and very easy recipe to prepare and very convenient to serve a crowd as an appetizer, football game day snack or quick meal on a busy weeknight. 

Buffalo chicken is a fun, familiar, popular food loved by many. The sliders are mildly spicy and loaded with flavor. Some kids may enjoy them too.

It’s a versatile recipe. Blue cheese or melty mozzarella cheese can be added instead of, or in addition to, cheddar cheese. Or you can swap out the ranch dressing for blue cheese dressing if that’s what you prefer. The tops of the rolls can be garnished with poppy seeds or ranch seasoning instead of garlic and parsley, as well.

Step-By-Step Instructions

Ingredients

Ingredients needed to make buffalo chicken sliders on a light gray surface with text overlay.

  • 12 King’s Hawaiian rolls: or the slider rolls of your choice.
  • 1 pound chicken (cooked and shredded): the chicken can be made in an Instant Pot or slow cooker for the easiest shredding. If you don’t have either of those, you can bake it on a sheet pan or in a casserole dish.
  • 4 ounces cream cheese (room temperature): letting the cream cheese come to room temperature makes it easier to blend into the chicken.
  • 1/2 cup buffalo sauce
  • 1/2 cup ranch dressing: I prefer to use buttermilk ranch, or for a little change, avocado ranch dressing also works really well in this recipe. If you’d rather not use ranch dressing in the sliders, you can use blue cheese dressing or add another 4 ounces of cream cheese.
  • 1 cup cheddar cheese (shredded): you could also use blue cheese or mozzarella cheese.
  • 1 tablespoon butter (melted)
  • 1/4 teaspoon dried parsley
  • 1/4 teaspoon garlic powder

Prep!

Set the cream cheese out about an hour ahead of time to allow it to come to room temperature. This helps make it easier to blend into the chicken.

Preheat your oven to 350°F.

Create!

Cut the tops off of the King’s Hawaiian Rolls. You can usually do this while they are all still connected. Place in a large casserole dish.

Mix together the shredded chicken, cream cheese, buffalo sauce and ranch dressing until well blended.

Top with the cheddar cheese and the tops of the buns.

Melt the butter and stir in the garlic powder and parsley.

Brush over the tops of the rolls.

Cover the casserole dish with aluminum foil and bake for 10 minutes.

Remove the foil and bake an additional 10 minutes or until the tops of the rolls are golden brown, the filling is hot, and the cheese is melted and gooey.

Once cool enough to handle, pull the sliders apart and serve.

Tips and Techniques

  • You can use rotisserie or leftover chicken to make this recipe even quicker. For chicken that shreds very easily, we recommend using an Instant Pot or slow cooker to cook it ahead of time. 
  • Make this recipe your own by swapping out cheddar cheese for blue cheese or mozzarella, or omit the ranch dressing for blue cheese dressing or 4 ounces of additional cream cheese.
  • The buffalo chicken filling can be ahead of time and stored in the refrigerator. When you are ready to cook, let it sit out for about 15 minutes before spreading onto the rolls.
  • Store leftovers tightly covered in the refrigerator. Consume within 3-4 days. Reheat sliders in the oven set at 350°F for best results. The internal temperature of reheated food needs to reach 165ºF on a food thermometer inserted into the center of the thickest portion.
