- Bacon: you can use any kind that you like. I find that thick-cut bacon is easier to dice and stays relatively thick after cooking, as well.
- Onion and Garlic Powder: these are optional, but I like to use them to add a little flavor. I don’t use fresh onion or garlic in this recipe because of the risk of burning it and the bitterness that can bring to the dish.
- Salt and Pepper: even though bacon is salty, you may find that you still need to add a pinch of salt.

Prep!
Trim the Brussels sprouts and cut them in half, lengthwise. Dice the bacon.
Chef’s Tip: to quickly and easily dice the bacon, leave it in a stack and slice it all at once.
Create!
Add the bacon to a large skillet or cast iron pan over medium heat. Cook until crisp, about 7-10 minutes. Remove with a slotted spoon to a paper-towel lined plate and set aside.
Drain all but about 2 tablespoons of the bacon fat from the pan and return to the stove top.
Carefully place the Brussels sprouts in the pan, cut side down and season with salt and pepper. Cook 3-4 minutes, until lightly browned and caramelized.
Turn over, season with onion and garlic powder (if using) and continue to cook, stirring occasionally until they are crisp-tender, about 2-4 minutes depending on the size of your sprouts.
Stir the bacon back in and cook an additional minute or two to warm through.
