A Blue Pineapple Cocktail is an ocean blue beverage made with blue curacoa, honey rum, pineapple juice and ginger ale. It takes only minutes to mix up so you can get back to your summer relaxing quickly!

Nothing says summer like a Caribbean blue cocktail! While our Irish Sunset Cocktail resembles a beautiful summer sunset, the bright blue color of this one is more reminiscent of the ocean.

This Blue Pineapple Cocktail is somewhat similar to a Blue Hawaiian Cocktail in that it uses rum, blue curacao, and pineapple juice, but the flavor profile is slightly different.

This beautiful beverage is made with blue curacao to give it some citrus flavor and an outstanding blue color.

Pineapple juice is added give it even more tropical flavor, while honey rum sweetens the beverage even more while also making it smoother.

Finally, ginger ale adds bubbles and gingery, sweet flavor.

Ingredients

Ingredients needed to make a blue pineapple cocktail with text overlay.

  • 2 ounces honey rum: we use Dogfish Head Honey Rum
  • 1 ounce blue curacao: we use Mr. Stacks Blue Curacao
  • 2 ounces pineapple juice
  • 2 ounces ginger ale

Prep!

There is no prep work for this recipe.

Create!

Add the honey rum, blue curacao, and pineapple juice to a glass and stir well. Pour in the ginger ale.

Present!

What Kind Of Alcohol Is Blue Curacao?

Blue Curacao is a Caribbean liqueur made with the dried peels of the Laraha citrus fruit, also known as the Curacoa orange. It is a curacao liqueur that has been dyed blue with a slightly lower percentage of alcohol.

The flavor is slightly sweet with a slight bitter finish. While it is primarily used to add color to beverages, it can also be used as a substitute for triple sec. 

What Is Honey Rum?

Honey rum is a type of rum made with a sugar source like cane sugar or molasses with honey added.
