This Fresh Blackberry Cobbler is the perfect simple summer dessert. Making fruit cobblers from scratch is super easy, plus the juicy fruit and tender topping are a mouthwatering combination.

Blackberry Cobbler is the perfect dessert to enjoy during the summer. It is so simple to prepare, anyone can do it, and it hardly takes anytime to mix and bake. Making cobbler from scratch is a great introductory recipe to baking and you can even include your children in the process since it is such a straightforward recipe.

If you enjoy Blackberry Cobbler, you should try making a Blackberry Crisp next. They are very similar except cobbler is a bit juicier and more tender. You can also try swapping the fruit by making a Blueberry Cobbler or Peach Cobbler. It is best to use fresh fruit, however frozen fruit will work in a pinch as well.

Cobbler is an easy dessert recipe; you only need to create two mixtures – a fruit filling and a dough topping. Most of the time spent making this dish is just waiting for it to bake.

The homemade blackberry filling is not too sweet, and allows the fresh fruit flavor to be the star of the dish. The drop biscuit topping provides a nice crunch, but also a tender crumb which soaks up all the delicious, flavorful juices.

Blackberry Cobbler is the ideal summer dessert but could also be enjoyed as a sweet breakfast treat. Serve fresh cobbler, warm out of the oven, with ice cream or whipped cream to add a bit of indulgence.

Step-by-Step Instructions

Filling Ingredients

  • Blackberries: fresh blackberries are best, especially freshly-picked, if you’re so lucky to be able to get them. You can use frozen, if necessary. If you use frozen blackberries, be sure to thaw them before using them. You can thaw them in the refrigerator overnight or at room temperature right before use.
  • Lemon: using just a little fresh squeezed lemon juice will enhance the flavor of the blackberries.
  • Pantry staples: flour, sugar, and butter.

Prep!

The only prep work for this recipe is to juice the lemon.

Preheat your oven to 350°F.

Create!

Combine the blackberries, lemon juice and sugar. Gently stir in the flour.

Spread the blackberry mixture into the bottom of a medium baking dish or individual baking dishes. Dot with the small pieces of butter.

I used 6-inch mini baking dishes for these images, but you can also use a medium baking dish like this 9.5-inch square baking dish for this recipe. Flour mixture with butter cut into it in a glass bowl on a marble background.

Combine flour, baking powder, sugar and salt. Cut in butter with a pastry blender or fork until medium, pea-size bit of butter remain.

Whisk together the egg and milk and add to the flour mixture. Gently stir until just combined.

Dollop spoonfuls of the dough onto the top of the blackberries. Sprinkle on extra sugar, if desired.

Cover loosely with foil and bake for 20 minutes. Remove the foil and bake an additional 20-25 minutes, or until the top is golden brown.

Serve as is, with whipped cream or ice cream. Cobbler pairs perfectly with a hot cup of coffee or chai tea.

    I’m not a fan of cobblers but this one turns out so good, especially with the biscuit dough! Not overly too sweet and it tastes so refreshing

    This cobbler sounds wonderful! The color from the blackberries is so pretty too! I saved it to make in the summer when those blackberries are fresh!
