The Bees Knees Cocktail is made with gin, lemon and honey. It’s bright, sweet and a little tart. This cocktail is perfect for special occasions and parties, especially during the warmer months.

A Bees Knees cocktail is a pre-prohibition beverage that is made with your favorite gin, freshly squeezed lemon juice and a honey simple syrup. It’s traditionally garnished with a twisted lemon peel, but we added a fresh sage garnish for a different option.

This classic cocktail is light, bright and perfect to serve during the warmer spring and summer months.

This is a simple and quick cocktail to make. You only need 3 ingredients and a few minutes to prepare it.

Step-By-Step Instructions

Ingredients

  • 2 ounces gin: you can use any gin that you love.
  • 1 ounce honey syrup: you can add more or less depending on how sweet you like your cocktails. Honey syrup can be store-bought or homemade.
  • 1 ounce lemon juice (fresh squeezed): freshly squeezed lemon juice tastes best, but bottled can be used if needed.
  • sage leaves (optional garnish)
  • twisted lemon peel (optional garnish)

Prep!

Squeeze 1 ounce of juice from a lemon.

If you do not already have a honey simple syrup, you will need to prepare that first and allow it to cool.

If you’d like a chilled cocktail glass, place it in the freezer at least a few minutes before you need it.

Create!

Fill a cocktail shaker with ice and add the gin, honey syrup and lemon juice.

Shake vigorously for 30 seconds or until chilled.

Strain into a coupe glass.

Garnish with fresh sage leaves and/or a twisted lemon peel, if desired.

Serve immediately or store in a covered container in the refrigerator.

Tips and Techniques

  • If you’d like a chilled cocktail glass, place it in the freezer at least a few minutes before you need it.
  • Use fresh squeezed lemon juice for the best flavor. Bottled lemon juice can be used in a pinch.
  • Use more or less of the honey syrup to adjust the sweetness of the recipe to suit your own tastes.
  • You can make this cocktail ahead of time and store it in the refrigerator for up to 5 days.
