Fall is my absolute favorite food season. Bring on the apples, the pumpkin, and all of the cozy comfort food.
These Apple Cinnamon Pancakes are the best way to start a cool fall morning. They are loaded with fresh, sweet apples and warm spices. A drizzle of maple syrup is the perfect complement, similar to our recipe for Apple Stuffed French Toast, which we also highly recommend trying this season.
Why This Recipe Works
This surprisingly easy pancake recipe uses mostly pantry staples and fresh apples. It is fairly quick to prepare.

Apple Cinnamon Pancakes are the perfect dish to serve to a crowd. They are simple, but delicious, and impressive enough to serve at a fancy brunch.
Step-By-Step Instructions
Ingredients
- 2 cups all purpose flour: we highly recommend using high-quality baking products like King Arthur brand for the best results.
- 1 tablespoon baking powder: make sure your baking powder is not expired or your pancakes may not turn out as fluffy.
- 1 teaspoon ground cinnamon: we prefer Simply Organic spices.
- 1/4 teaspoon salt
- 1 1/2 cups whole milk
- 1 egg
- 2 tablespoons brown sugar (packed)
- 1 tablespoon butter (melted and cooled some)
- 1 teaspoon vanilla extract
- 1 apple (grated, excess liquid squeezed out): you can use tart or sweet apples.

Prep!
Melt the butter and allow it to cool.
Grate the apple and squeeze out as much excess liquid as possible.
Create!
Combine the flour, baking powder, cinnamon, and salt in a medium size bowl. Stir to combine.
Make a well in the middle of the flour mixture and add the milk, egg, brown sugar, butter, and vanilla extract.
Whisk until just combined. Be sure not to over-mix the batter. Doing so can result in rubbery pancakes. It’s okay if there are small lumps in the batter.
Gently stir in the grated apple. Set aside to rest while you preheat your griddle or pan.
Preheat your griddle to 300°F or a large, flat bottomed, non-stick skillet to medium-low heat.
Chef’s Tip: cook the pancakes at a lower temperature so that they cook more slowly. This will allow the pancakes to cook through all the way without browning too much on the outside.
Spray the griddle or pan lightly with non-stick cooking spray or lightly coat with butter.
Scoop out 1/3 cup batter per pancake and place on the griddle in a circular shape. Cook 3-4 minutes or until lightly golden on the bottom and bubbles just start appearing on top. Flip and cook 2-3 more minutes or until the bottom is golden as well and the pancakes are just cooked through.
If you pancakes are browning too quickly, lower the heat some.
Remove to a plate and repeat with the remaining batter, as needed.
Present!
Stack up a few pancakes and top with butter, maple syrup, and/or apple slices.
Tips and Techniques
- You can use any apples you like. Using a tarter apple, like Granny Smith, will give you a balance of sweet and tart, while using sweeter varieties, like Fuji, Gala, or Honey Crisp, will result in overall sweeter pancakes.
- Be sure not to over-mix the batter. Doing so can result in rubbery pancakes. It’s okay if there are still some small lumps in the batter.
- These pancakes are cooked at a lower temperature to allow the center to cook fully without the outside getting too dark.

Yes. Freeze pancakes with a sheet of wax paper between each one. Use within 1-2 months for the best results.
How Do You Reheat Pancakes?
You can reheat pancakes in the microwave on 20-second intervals until hot or on a baking sheet in an oven preheated to 350°F for just a couple of minutes. Some people even like to reheat single pancakes in the toaster.
